A NC 700 has come up for sale near me I'm interested anyone had one what do you think

Having test ridden a NC700 and NC750 in both X and S forms the NC750 (with DCT) engine is better and has more controls to make a more flexible ride. It depends on budget though, I would expect a similarly condition/mileage NC700 to be cheaper than a NC750. Handling, comfort, etc there should be no difference. I love my NC750X a lot, its better than all my previous test rides and purchased bikes. I can't honestly see myself owning any another ICE bike until I can switch to Electric.

I have little or no personal experience with these, but - if the one you've seen is a DCT version - I believe the software in DCT gearbox has been refined over time to make it a bit more rider friendly and to remove some of its quirks. So later 750s are possibly more desirable (as well as more powerful!).
Of course, if the one you've seen is a manual, then this comment won't help much!

I have owned a 2018 NC 700S Manual, and a 2019 NC 750X, with a DCT gearbox (auto). I kept neither very long. Is it the NC 700 you are talking about - manual or DCT ( auto) ? I can give you my opinion, if you say which model you are talking about.

It's the manual version

A mate of mine runs a manual 700x. It's quicker than my Silverwing but slower than my Tenere and uses way less fuel than either of them. He has an extensive stable of bikes but it's nearly always the NC he turns up on.
Good build quality as far as the running bits go but expect it to look a bit rusty on the cosmetic bits after a few rounds of road salt.

The one I owned was actually the Honda NC750S manual ( 2018 year), but I think it was very similar to the earlier NC700S.
It had a very good engine with plenty of low down pull and acceleration / drive out of bends. It handled well, sounded good with the standard exhaust, and had decent brakes and excellent fuel economy. I regularly got 80 mpg and saw 90mpg when I was really trying to ride smoothly to see what I could get the mpg up to. Fantastic really, for a 750.
A good feature is the false fuel tank which is actually a lockable storage area in which you can fit quite a bit of stuff and manage without a top box if you want. The fuel tank is under the seat.
A lot of owners have complained about hitting the rev limiter, which cuts in quite low compared to other bikes. I think Honda were trying for good MPG - which they achieved.However I did not find this a problem as it had plenty of pull to change up early.
I found I got a lot of buffeting which was not alleviated by fitting a touring screen, with spoiler.
I also found the suspension very hard and unforgiving, as was the seat.
Those are my pros and cons. I could not live with the buffeting and very hard ride, and so I sold it. I only kept it 3 months.
